Description
Pachamanca is a culinary tradition that dates back to the Incas, as it’s a way to celebrate and pay respect to Pachamama or Mother Earth, a deity representing fertility to the indigenous people in Peru. Pachamanca is a real feast that plays a key role in gatherings in different regions of Peru.
Andean Pachamanca is prepared by digging a hole and heating stones over fire. When the stones are hot enough, they’re placed in the hole making an oven where a selection of flavourous meats that have been marinated with fine local herbs, and a variety of native vegetables and potatoes are placed within. The underground stone oven remains closed for 2 – 4 hours allowing the contents to cook slowly.
Surrounded by colourful mountains, hummingbirds, and horses, we’ll have a specially prepared spot where our expert Pachamanqueros will carefully prepare this very special dish for you to immerse yourself in the Peruvian culture.
